Bolu kukus (lit. 'steamed tart') is anIndonesian traditional snack ofsteamed sponge cupcake.[2][3] The term "bolu kukus" however, usually refers to a type ofkue mangkuk that is baked using mainlywheat flour (without any rice flour and tapioca) withsugar, eggs, milk and soda, while also using commonvanilla, chocolate, pandan orstrawberry flavouring, acquired fromfood flavouring essence.[3] The cake makes use of beaten eggs andsoda as anemulsifier, the type of soda often being lemon sparkling water,[2] such asSprite.[3]
Bolu kukus is considered a type ofkue bolu, which encompasses a variety of sponge cakes, cupcakes and tarts. The termbolu derives from thePortuguesebolo to generally describe acake. The texture is thus soft and fluffy just like a tart or chiffon cake.Bolu kukus is a steamed tart instead of a commonly baked cupcake. Thebolu kukus base is, however, usually covered with a corrugated paper container, just like common cupcakes.
