
Blodplättar (in Swedish;blodpannekaker in Norwegian,veriohukainen,verilätty orverilettu in Finnish;verikäkk in Estonian), or blood pancakes in English are a dish served inFinland,Estonia,Sweden andNorway made of whipped blood (typically reindeer blood), water or pilsner, flour and eggs.[1] It is similar toblack pudding, but is thinner and crispier.[2]
Blodplättar may be fried in afrying pan. The pancakes are usually served with crushedlingonberries or lingonberry jam, sometimes with pork orreindeer meat.[3]
InSwedish, the word may also be used to refer to bloodplatelets.[4]
Blodplättar tastes very similar to black pudding, has a bone marrow flavor, and has a rich, fatty texture.[5]
