Blackout cake, sometimes calledBrooklyn Blackout cake, is achocolate cake filled with chocolate pudding and topped with chocolate cake crumbs. It was invented during World War II by aBrooklyn bakery chain namedEbinger's,[1][2] in recognition of the mandatoryblackouts to protect theBrooklyn Navy Yard.[3][4][5]

After the war, the name persisted for a very dark chocolate cake and became common across the American Midwest.[6] Ebinger's variety was very popular and became a signature offering, popular with Brooklyn residents,[7] until the chain of more than fifty locations closed on April 2, 1972.[4][5][8][9]
