Bigarade sauce

Classic French sauce
Duck a l'orange

Bigarade sauce is an orangesauce based on thegastrique, sugar caramelized withwhite vinegar.[1] The name comes from thebigarade orange, which is nowadays mainly replaced by sweet oranges.[2]

The recipe initially contained equal parts of lemon juice and orange juice with zests from these same fruits, but nowadays, only the orange juice and zests are used.[2]

It's most well known use is in theFrench dishduck à l'orange.[1]
