Bastani (Persian:بستنی), locally known asbastani sonnati (Persian:بستنی سنتی "traditional ice cream") orbastani sonnati zaferani (Persian:بستنی سنتی زعفرانی "traditional saffron ice cream"), is anIranianice cream made frommilk,yolk,sugar,rose water,saffron,vanilla, andpistachios. It is known widely asPersian ice cream. Bastani often contains flakes of frozenclotted cream.[1][2] Sometimes,salep is included as an ingredient.
Āb havīj bastani (Persian:آب هویج بستنی) is anice cream float usingcarrot juice and occasionally, may be garnished withcinnamon,nutmeg, or otherspices.

The history of bastani probably began around 500 BC in theAchaemenid Empire ofPersia.[3][4] Varioussyrups would be poured oversnow to produce summertime treats called "fruit ice" (sharbat). Typically, the ice was mixed with saffron, grape juices, fruits, and other flavours. The Macedonian leaderAlexander the Great, who battled the Persians for ten years, enjoyed "fruit ices" sweetened withhoney and chilled with snow.[citation needed]
In 400 BC, the Persians also invented asorbet made with rose water andvermicelli calledfaloodeh (Persian:پالوده).[5] Persians introduced ice cream and faloodeh to Arabs after theArab invasion of Iran and the fall of PersianSasanian Empire.[6]
