Bamboo Sushi is a small chain ofJapanese restaurants based inPortland, Oregon, in the United States. The business has also operated inBeaverton, Denver,Lake Oswego,[1] and Seattle. Bamboo Sushi is owned bySortis Holdings (previously, Sustainable Restaurant Company).[2][3] Michelle Andersen is thechief executive officer of Bamboo Sushi.[4]

History and locations

Kristofor Lofgren started Bamboo Sushi in 2008.[5][6]

There were five locations inPortland, and one each in Denver and Seattle'sUniversity District,[7] as of 2019.[8]

In May 2020, Sustainable Restaurant Group, parent company of Bamboo Sushi, filed forChapter 11 bankruptcy protection due to theCOVID-19 pandemic.[9] The company was acquired by Sortis Holdings in July 2020.[10]

Bamboo Sushi opened inBeaverton in August 2022.[4]

Reception

Bamboo Sushi won in the Best Place to Eat Sustainably and Best Sushi categories ofWillamette Week's annual readers' poll in 2015.[11] The business won in the latter category again in 2022.[12]
