Ammonium caprylate is achemical compound with the chemical formulaC8H19NO2.[1]This is an organic ammonium salt ofcaprylic acid.[2]
Ammonium caprylate can be prepared by reactingcaprylic acid andammonia.[3]
Ammonium caprylate forms hygroscopic crystals of themonoclinic system.
It can be easily hydrolyzed by water. It is soluble inglacial acetic acid andethanol; less soluble inmethanol; slightly soluble inacetone andethyl acetate; and practically insoluble inchloroform orbenzene.[4]
Ammonium caprylate loses ammonia slowly in dry air, but this process is accelerated in humid air.[5]
The compound is used to produce photographic emulsions, also as aninsecticide andnematocide, and in manufacturing of zinc caprylate.[6] In the food industry it is used as anemulsifier,stabilizer, andanticaking agent.[7]
