İzmir Bombası (English:İzmir Bomb), orPraline Stuffed Cookies,[1] is akurabiye from theTurkish cuisine filled withchocolate spread.[2] The kurabiye gets its name fromİzmir, the place where it originates. The dessert has a crispy dough layer on the outside and a fluid cream filling on the inside. Different stories have been published by Turkish media about who made the kurabiye first.[3][4]

According toGoogle Trends, the İzmir Bomb was the 6th most searched recipe in Turkey in 2020.[5][6]

History

The dessert is believed to be an evolution of theMurabbalı mecidiye, which is a similar kurabiye from theOttoman cuisine filled with apricotmurabba. The cause of the popularity of the İzmir Bomb is the massive advertisement shared onsocial media.[4]

Types

The most common Bomb Kurabiye is made by filling white dough with chocolate spread or by filling brown dough withwhite chocolate spread. Apart from this there are also types withraspberries.[7] After the dessert became popular, versions filled withpoppy seed paste instead of chocolate spread have been made in theAfyonkarahisar Province.[8]

Mass production

In Turkey, the biscuit is mass-produced byÜlker asBiskrem,[9] byEti asTutku[10] and by Torku asDelidolu.[11]
