
Çılbır orTurkish Eggs is a Turkish dish ofpoached eggs withyogurt (often withgarlic mixed in).[1]
There are records of çılbır being eaten byOttoman sultans as far back as the 15th century.[2][better source needed] It is now common to serve the dish topped with melted butter infused withAleppo pepper,[3] for whichpaprika can be substituted.
In several Balkan countries such asBosnia and Herzegovina,Montenegro andSerbia, the Turkish wordçılbır is rendered asčimbur and refers to a dish of fried eggs. Almost identical is thePanagyurski style eggs dish inBulgaria.
