Yema is a sweetcustardconfectionery from thePhilippines. It is made with egg yolks, milk, and sugar.[1][2]

The nameyema is fromSpanish for "egg yolk". Like other egg yolk-basedFilipino desserts, it is believed thatyema originated from early Spanish construction materials. During theSpanish colonization of the Philippines, egg whites mixed withquicklime andeggshells were used as a type ofmortar to hold stone walls together. Filipinos reused the discarded egg yolks into various dishes.[3][1] Among them isyema, which is possibly based on the Spanish pastryYemas de Santa Teresa.[1][2]

Yemas were originally made with only egg yolks and sugar, heated and stirred until the consistency is thick. They are then shaped into small balls or pyramids and covered in white sugar. Milk (orcondensed milk) later became part of the recipe (probably during theAmerican period).[citation needed]

Modern variations also usually include chopped nuts.[4][3]

Yema has also evolved into a Filipinocustard flavor or Filipinocaramel filling for other pastries and sweets likecakes, breads, andbars.[5][6][7]
