Grasshopper pie is a no-bake mint-flavoredmousse pie with a chocolatecrumb crust. Typically light green in color, it is associated with spring, and especially withEaster celebrations in theUnited States.[1] The pie takes its name from theGrasshopper cocktail.[2]
Grasshopper pie filling is made by foldingwhipped cream intomarshmallow orcream cheese. The cream cheese version is made by adding greenfood coloring to a mixture ofcondensed milk with cream cheese, then gently folding inchocolate-covered mint cookie crumbs andwhipped topping.[3] Alternately, melted marshmallows can be gentlyfolded into fresh whipped cream.[4] The filling is infused withcreme de menthe andcreme de cacao, which give the mousse its characteristic green coloring.[5]
The crust is a chocolate cookie crumb crust, variations of which can be made with crumbledsandwich cookies, or by melting chocolate in adouble boiler and stirring incrisped rice cereal, then pressing the mixture into a pie dish and allowing it to set in the refrigerator.[6]
Grasshopper pie can also be made as anice cream pie.
Blonde grasshopper pie is made with crushed pineapple and white creme de menthe and creme de cacao, and so is called "blonde" because it lacks the artificial green coloring of the original version.
