Update mpl-sphinx-theme in environment.yml

Update mpl-sphinx-theme in environment.ymlWe still explicitly list pydata-sphinx-theme so that it and its dependencies is fetched from conda-forge and not pip.Also pikepdf is now available on conda-forge
