Noticed README for mcpurl referenced Anthropic's MCP Server when I think intent is to reference Github's - probably some copy pasta origin

Pull Request Overview
This PR updates the mcpurl README to correct a reference from Anthropic's MCP server to Github's MCP server.
- Corrected the documentation to reference the correct MCP server.
- Updated the example command line invocation accordingly.
Anthropic built the initial implementation, and I think at first we compared outputs using this to ensure we weren't diverging. Probably a legacy of that. |

Noticed mcpurl README referenced Anthropic's MCP when I think it's intended to be Github's MCP. Maybe a copy pasta - super easy change.
