As far as I'm aware, you most certainly can root graphene. In fact, I just went back to stock os on my pixel 8 from having rooted it with GrapheneOS.
Why?
 
Good day. I bought a new pixel 8. I would like to install a firmware with high security. I want to install GrapheneOS. But you can't get root there. Please advise how to install the same secure OS but with root?
Rooting a device makes it impossible to have security on that device as you're literally exploiting a software weakness to gain the elevated (root) privileges.
