Welf pudding orGuelph pudding (German:Welfenspeise orWelfenpudding[1]), sometimes known asHock Pudding,[2] is a two-layeredpudding fromGermany. The white bottom layer is made from a cookedmilk andvanillasauce on a base of very stiffly whippedegg white. After being chilled it is then covered with a yellow layer of wine sauce made of beatenegg yolk,white wine and a littlelemon juice.[2]
Welf pudding gets its name from the colours of theHouse of Welf (also known as the House of Guelph), a German aristocratic family that ruled thePrincipality of Lüneburg inmedieval times.[3][4] The pudding is a culinary specialty fromLower Saxony in north Germany.[5] It was created by a Hanoverian chef and served for the first time at the 200th anniversary of the rule of the House of Welf. It is said that it became the favouritedessert ofErnest Augustus, Elector of Hanover.[6]
