Tortang kalabasa, also known assquash fritters, is aFilipinoomelette made by mixing mashed or finely-gratedpumpkin (calabaza) with flour, water, egg, salt, and pepper. Other ingredients like minced vegetables can also be added. It is very similar tookoy, but the latter is made withglutinous rice batter rather than eggs. Regardless it is sometimes known assquashokoy orokoy na kalabasa.[1]
