Sohan asali (Persian:سوهان عسلی,romanized: sohān-e asali; fromsohan, a saffron toffee, andasal,lit. 'honey') is a kind ofIranian confectionery originating inIsfahan, Iran.[1][2] It is made fromhoney,sugar,saffron,almonds,pistachios and othernuts.[3][2]
It is akin to a hard toffee, being brittle and breaking into shards. It differs from the more ubiquitous confectionery from the city ofQom (sohān-e-Qomi) as it uses no wheat and much less butter and oil. This makes it lessshort and able to hold its structure, whereassohān-e-Qomi can disintegrate into powder when pressed hard.
