Sobao orsobao pasiego or sobau or sobau pasiegu is a Cantabria and Spanish delicacy typical of theValles Pasiegos and one of the key signature delicacies ofCantabria.Thesobao pasiego possessesGeographical indication since 2004.[1][2]

In the earliest recipes, the ingredients were breaddough, white sugar and butter with eggs,lemon zest andanise liquor orrum.The modernsobao was developed in 1896, when a cook named Eusebia Hernández Martín replaced the bread dough withflour.[1]
