Sneem Black Pudding (Irish :Putóg Dhubh na Snadhma ) is a variety ofblack pudding produced inSneem ,County Kerry ,Ireland .[ 1] [ 2] [ 3]
Produced by localbutchers Peter O'Sullivan and Kieran Burns,[ 4] blood pudding , uncased and tray-baked. It has a deep red-brown colour and is free fromartificial colours ,flavours ,bulking agents andpreservatives ."[ 5] suet ,onions ,oat flakes, spices and blood (from pigs, cattle and lambs ofSouth Kerry ).[ 6] [ 7]
It is claimed that home blood pudding production in the region dates back to the early 19th century, traditionally produced by women; the current recipe dates to the 1950s.[ 8] [ 9] [ 10] Protected Geographical Indication (PGI) status.[ 11] [ 12] [ 13] [ 14]
