Sev puri is anIndian snack and a type ofchaat.[1] It is a speciality that originates[citation needed] fromMumbai, Maharashtra, India.[2]InPune and Mumbai, sev puri is strongly associated withstreet food, but is also served at upscale locations.[1][3] As of today, supermarkets in India and around the world have started stocking ready-to-eat packets of sev puri and similar snacks likebhelpuri.[4][5]
Although there is no fixed recipe for sev puri, the basic ingredients used widely are the same. Sev puri is essentially made of crispypapdi (flat puri) which is loaded with dicedpotatoes, chickpeas,onions,tomatoes and various types ofchutneys. Some popular chutneys used include spicy mint and coriander, sweet-sourtamarind,chili andgarlic.[6] The filled puris are then heavily garnished with the signature ingredient,sev. In some regions, it is seasoned with various spices and flavors, such asraw mango,ginger, anise, cumin,clove, and chaat masala.[7][8]
The final finishes to the dish often include chopped coriander,pomegranate seeds and a drizzle of eitherlime orlemon juice.[9]
Sev puri can be made with a variety of fillings and garnishing ingredients. Some popular variations aredahi sev puri,masala sev puri, cornmasala puri,[10]batata dahi sev puri (sev puri withdahi andpotato), andpalak sev puri (sev puri withspinach). Sometimes other chutneys andpaneer are also added in its preparation.[11]
