
Sardenaira (also known aspissalandrea,pizza all'Andrea,[1]piscialandrea,pizzalandrea,[2]pissadella[3] orsardenaira[4]) is apizza dish, withoutcheese, from theLiguria region ofItaly.[5] It is very similar to thepissaladière.[5][6][7][8] Although termed a pizza, some consider it more akin to afocaccia.[8]
It is known assardenaira orpizza all'Andrea, after admiralAndrea Doria (1466–1560), whose favorite food was the dish: a slice of bread witholive oil,garlic, and salted anchovy.[7][8]
The dish predates the better-knownNeapolitan pizza.[7] Since the dish was created before theColumbian exchange, traditionalists do not addtomatoes.[7]
In the city ofSanremo, in western Liguria, it is garnished with saltedanchovies, localolives,garlic cloves, andcapers.[6]
