Sapin-sapin is a layeredglutinous rice andcoconut dessert inPhilippine cuisine. It is made fromrice flour,coconut milk,sugar, water, flavoring, and coloring. It is usually sprinkled withlatik orgrated coconut among other toppings. The dessert is recognizable for its layers, each colored separately.[2]
The name originates theTagalog wordsapin which means "underlayer [for cushioning]" (e.g. a blanket sheet, compare withCebuanohapin). Whenreduplicated assapin-sapin, it means "having several layers".[3][4]
