Salată de boeuf ("beef salad") is a traditionalRomanian dish, generally served during all festive and special occasions. It is a combination of finely chopped beef (or sometimes chicken, or turkey breast) and root vegetables, folded inmayonnaise and finished withmurături (pickled vegetablegarnishes).[1] It can be made as a vegetarian dish as well.[2]
The dish is usually made in large quantities for the whole party on occasions such asChristmas Eve.[3] It is eaten as a side dish or salad with fried meats or as anappetizer.
The name may suggest aFrench culinary influence as the wordbœuf isFrench for beef. It closely resemblesOlivier salad (Russian salad).[4][5]
