Ruske kape (English:Russian caps) are a type ofcakedessert served inBalkan countries, especially inBosnia and Herzegovina,Croatia andSerbia. It usually comes in a 60-millimetre-wide (2.4 in), round serving and includes coconut around the edge or sometimes crushedwalnuts. The top is usuallychocolate drizzled withvanilla. The center includes layers of alternating vanilla, chocolate, and sometimes amocha flavor.
The design of the confectionery itself is based on thepapakha, a traditionalshepherd's hat that is worn all throughout the mountainousCaucasus region, albeit the term "ruske kape" comes from theRussianCossacks who wore the hat in the regiments they belonged to, hence its given name in the Balkans.[1]
This dessert comes served chilled, usually on colorful plates drizzled with chocolate. It can be eaten with a fork but is sometimes eaten in a casual manner; people eat it like a cupcake with the hands.
