Qottab (Persian:قطابqottâb) is an almond-filled deep-friedIranian cuisine pastry or cake,[1] prepared withflour,almonds,powdered sugar,vegetable oil, andcardamom. In some cases, ground walnuts are substituted for almonds. The city ofYazd is well known for itsqottab, which is commonly prepared during the Persian new year (Nowruz).[2]

Qottab developed from an earlier savoury pastry known assanbosag, the ancestor of the Ethiopiansambusa and the South Asiansamosa. Since the 16th century, the original savoury form ofsanbosag has become rare outside of the region ofLaristan and the Persian Gulf Coast.
