O-tao (Thai:โอวต้าวIPA:[ʔoːtâːw] orโอวต้าว[ʔoːwátâːw]) is anoyster omelet dish ofHokkien origin in thelocal cuisine ofPhuket Province, Thailand.[1][2] The Thai name comes from theHokkien Chineseô-tau (蚵兜)[3] orô-á-tau (蚵仔兜), a similar dish fromFujian, China. It is made of flour andtaro, with small oysters (hoitip [หอยติบ]), shrimp, bits ofpork cracklings andspring onions added.[4] It is eaten with a sweet and spicy sauce and is served with a side dish ofbean sprouts.[3]
