Noodle latkes, also known asRomanian noodle latkes,pasta latke, orpasta latkes, are a type oflatke made withpasta ofRomanian Jewish origin, that is traditionally prepared duringHanukkah, although they may be eaten as a side dish during other times of the year.[1][2][3]

Origin

Noodle latkes originated within theRomanian Jewish community several hundred years ago, and were brought toIsrael and theUnited States where their descendants still prepare this dish.[4]

Overview

Noodle latkes consist ofegg noodles or fine egg pasta that has been boiled and drained, and combined with ingredients including egg, butter or margarine and a number of other ingredients to form a batter, which is shaped intolatkes and fried in oil orschmaltz. They are traditionally prepared during theJewish holiday ofChanukah byRomanian Jews, asfoods fried in oil are traditionally consumed byJewish people during Hanukkah to commemorate themiracle of the oil and the victory of theMaccabees over theGreeks inAncient Israel.[5][6]

Variants

Noodle latkes come in a number of varieties, some of which are listed below.

Sweet

Sweet variants include egg, butter or margarine (ifpareve) sugar, cinnamon, and oftentimes raisin, and may be dusted withcinnamon sugar orpowdered sugar upon serving. This is somewhat similar to a sweetnoodle kugel.[7]

Savory

Savory variants also include choppedonion and seasoning such as salt, pepper and various spices, and may be fried in vegetable oil orschmaltz.[8][9]
