Mujdei[1] (Romanian pronunciation:[muʒˈdej], plural:mujdeie) is a traditionalspicyRomanian sauce. It is made fromgarlic cloves crushed and ground into apaste, salted and mixed energetically withvegetable oil (almost alwayssunflower oil). Depending onregional preferences and thedish it is served with,lemon or otheringredients may be added. The result is awhitesauce with a strong garlic flavor, varying inconsistency from a thick paste to a runny sauce. In some parts ofRomaniamujdei is made out ofcream, ground garlic, andsalt. Sometimes ground garlic, salt, little water, oil and paprika powder.
It is served with a variety of dishes, includingfried fish,fried or grilled chicken orpork,rasol, andfried potatoes.
The wordmujdei is derived from the phrasemust de ai, meaning "garlic must (juice)".[1]
