Mole de olla is a Mexican traditionalsoup made ofbeef chuck (aguja),beef shank (chambarete),xoconostle (a kind of ediblecactus),chayote,zucchini,green beans,corn,potatoes, andcabbage flavored with a thinmole of groundchile guajillo,chile pasilla, garlic, onion, andepazote. It is served with pieces of choppedserrano pepper and limes.
