Menudo (fromSpanish: "small [bits]"), also known asginamay orginagmay (Cebuano: "[chopped into] smaller pieces"), is a traditional stew from thePhilippines made withpork and slicedliver intomato sauce withcarrots andpotatoes.[1] Unlike the Mexicandish of the same name, it does not usetripe,hominy, or red chili sauce.[2]

The dish is made withgarlic,onions,tomatoes,pork,liver (pork or beef), dicedpotatoes,peas,raisins, dicedcarrots,green bell peppers,soy sauce,vinegar orcalamansi, andtomato sauce, and seasoned withsalt andpepper.[3]

It is one of the most common offerings incarinderias orkarinderyas (small eateries that offer budget-friendly meals to local residents) and is also commonly served in potlucks or buffets due to the inexpensive ingredients used in the dish.

Waknatoy, also calledMarikinamenudo, is aFilipino porkstew withpickles. It is a variant of the Filipinomenudo stew originating fromMarikina. It is made with cubed pork and pork liver with sausages (typicallyChorizo de Bilbao), red and green bell peppers, tomatoes, garlic, onions, and distinctively,pickle relish, cooked in a tomato-based sauce with salt, pepper, fish sauce, and bay leaves. Waknatoy does not traditionally include other vegetables like potatoes and carrots, likemenudo, but they can be included.[4][5][6][7][8]
