Manchamanteles

Manchamanteles (literally, "tablecloth stainer") inMexican cuisine, is a stew of assortedmeat,chili peppers,vegetables, andfruits. A typical recipe for mancha manteles containschicken and/orpork,chorizo,pineapple,apple,banana,chili peppers,almonds,cinnamon,lard andtomatoes.[1]

The sauce in manchamanteles is considered to be a kind ofMole (sauce).[2]
