This is a list of dishes featuringeggplant as the main or an essential ingredient.Eggplant, also known asaubergine, is used in the cuisine of many countries. It is often stewed, as in the Frenchratatouille, or deep-fried as in theItalianparmigiana di melanzane, the Turkishkarnıyarık or Turkish and Greekmusakka/moussaka, andMiddle Eastern andSouth Asian dishes.

Eggplants can also be battered before deep-frying and served with a sauce made oftahini andtamarind. In Iranian cuisine, it is blended withwhey askashk e-bademjan, tomatoes asmirza ghasemi or made into stew askhoresh-e-bademjan. It can be sliced anddeep-fried, then served with plainyogurt, (optionally) topped with atomato andgarlic sauce, such as in theTurkish dishpatlıcan kızartması (pronounced 'potlejon'; meaning:fried aubergines) or without yogurt as inpatlıcanşakşuka. Perhaps the best-known Turkish eggplant dishes areimam bayıldı (vegetarian) andkarnıyarık (with minced meat).

Fried aubergine
Karnıyarık is aTurkish dish consisting of eggplant stuffed with a mix ofsautéed chopped onions, garlic, black pepper, tomatoes, parsley and ground meat.
Rollatini is anItalian-style dish usually made with thin slices of eggplant that are dusted inwheat flour or lightlybreaded, covered withricotta and often other cheeses and seasonings, then rolled up and baked.
