Houlle (French pronunciation:[ul];West Flemish:Holne) is acommune in thePas-de-Calaisdepartment in theHauts-de-France region ofFrance.[3]
A village situated 5 miles (8 km) northwest ofSaint-Omer, on the D207 road. "Houlle" is also the name of a small river close to the village, tributary of theAa, included in the water management plan (fr:SAGE) of the Audomarois region.
Spirits fromgrain, flavoured with berries of thejuniper tree, are distilled in Houlle, theGenièvre (juniper) of Houlle; this spirit is very close to the Dutchjenever and more distantly related to drygin. This is drunk with the local speciality, (potjevleesch) and is used to refineMaroilles cheese.
