Gremolada (Italian:[ɡremoˈlaːta]) orgremolata (Italian:[ɡremoˈlaːda],Lombard:[ɡremuˈlaːda]) is agreen sauce made with choppedparsley,lemon zest, andgarlic. It is the standard accompaniment to theLombardbraisedvealshank dishossobuco.[1][2]
Gremolada usually includes gratedlemon peel, although the zest from othercitrus fruits (lime,orange,grapefruit, etc.) may be used.
Variations including adding or substituting other herbs (such ascilantro/coriander,mint, and sage); leaving the herbs out (in favor of finely grated freshhorseradish and mincedshallot); or adding another pungent ingredient (such aspecorino romano cheese,anchovy, toastedpinoles, and gratedbottarga (dried salted fish roe)).[3][4]
