Ginataang langka , is aFilipino vegetable stew made from unripejackfruit incoconut milk and spices. The dish includes a wide variety of secondary ingredients like seafood, meat, and other vegetables. The dish also commonly addsbagoong alamang (shrimp paste) and may be spiced with chilis or soured withvinegar . Notable variants of the dish areginataang kamansi andginataang rimas which usebreadnut andbreadfruit , respectively.Ginataang langka is a type ofginataan .[ 1]
The basic recipe forginataang langka includes unripejackfruit (langka , seeded and sliced),coconut milk , garlic, onion, salt and pepper to taste, and usuallybagoong alamang (shrimp paste) orpatis (fish sauce). It can also use thickening agents likewhite jute (lumbay ),jute mallow (saluyot ), orokra , among others. The dish can also be spiced withsiling haba orlabuyo peppers,ginger ,lemongrass or soured withvinegar .[ 2] [ 3] [ 4] [ 5] [ 6] [ 7] [ 8]
The secondary ingredients forginataang langka can vary widely and includes fish (includingdried fish andsmoked fish ),shrimp ,crab , otherseafood , meat (includingsausages ), and combinations thereof.Moringa leaves (malunggay ) can also be added.[ 9] [ 10] [ 11] [ 12] [ 13] [ 14]
Avegan orvegetarian version of the dish can also be created by simply omitting the meat and seafood and using mushrooms in place of shrimp paste or fish sauce.[ 1] [ 15]
Jackfruit inginataang langka can be replaced withbreadnut (kamansi ),breadfruit (rimas orreema ), and more rarely,antipolo ; resulting inginataang kamansi ,ginataang rimas , andginataang antipolo , respectively. They are otherwise prepared identically.[ 16] [ 17] [ 18] [ 19]
