Garae-tteok (Korean: 가래떡) is a long, cylindricaltteok (rice cake) made with non-glutinousrice flour.[1][2] Grilledgarae-tteok is sometimes sold asstreet food.[3] Thinly (and usually diagonally) slicedgarae-tteok is used for makingtteokguk (rice cake soup), a traditional dish eaten during the celebration of theKorean New Year.[4] The world record of the longestgaraetteok was achieved inDangjin, South Korea in 2018, with 5,080 metres (16,670 ft).[5]
It is traditionally made by steaming non-glutinousrice flour insiru (steamer), pounding it and rolling it between the palms and the table or rolling it between the palms.[1][6] The method forms a thick, cylindrical rice cake, around 2.5 centimetres (0.98 in) in diameter.[4][6] Hand-rolledgarae-tteok is not uniform in size and has variations of thickness along its length.
Moderngarae-tteok is usually made byextruding the steamed rice flour withgarae-tteok machines.[6]
