Dragon tiger phoenix is a classicCantonese cuisine dish found almost exclusively in regions such asGuangdong. This dish is rarely eaten in modern days.
The name of the dish comes from the use of three animals. Thedragon is represented bysnake,tiger is represented bycat (sometimesmasked palm civet is substituted) andphoenix is represented bychicken.[1][2]
There are a few varieties of the dish. One version is literally called the "dragon tiger phoenix big braise" (龍虎鳳大燴).[1] Another is thechrysanthemum dragon tiger phoenix" (菊花龍虎鳳).[3]
