Dal bati churma is the most popular dish inRajasthani cuisine. It is made up of three components ofbati,dal, andchurma. Dal is lentils, bati is a baked wheat ball, andchurma is powdered sweetened cereal.Churma is a popular delicacy mostly served withbaatis anddal. It is coarsely ground wheat crushed and cooked withghee and sugar. Traditionally it is made by mashing up wheat flour baatis or left overrotis in ghee andjaggery.
