Chancaca is a typical Bolivian, Chilean and Peruvian, warm, sweetsauce made of raw unrefinedsugar from sugarcane. It is often flavored withorangepeel andcinnamon, and is consumed onsopaipillas orpicarones.

Chancaca is also a synonym forpanela, the unrefined sugar used to make chancaca syrup.[1] Chancaca can be used to preparechicha de jora, Peruvian maize beer.[2]

In Colombia,chancacas are a traditionalcoconut candy.
