Cathare (Occitan:Catara) is agoat's milk cheese from theLanguedoc-Roussillon region ofFrance.[1] Thecheese comes in flat discs whose face is covered incharcoal powder with theOccitan cross inscribed. Under the rind, Cathare is pure white with a soft, creamy texture.[2] Its goat-milk flavor intensifies as it ages,[3] and reaches its prime after two to three weeks, which makes it typically unavailable in theUnited States, due to theFood and Drug Administration's stance thatraw milk soft cheeses can pose a health risk.[4] The sale of raw milk cheese aged under 60 days is illegal in the United States.[5]
