Byais (also spelledbya-is,biya-is, orbiyais), is a traditionalFilipinowine from theMansaka people ofDavao de Oro. It is made from boiledlengkuas (pal'la,palla,panla, orpangla inMansaka) mixed with honey orsugarcane juice which are then fermented in tightly sealedearthen jars (tadyaw). It has a sharp flavor reminiscent ofcitrus fruits or pine needles.[1][2][3][4]
