Abrioua orbriwa, pluralbriwat (Arabic:بريوات) is a sweet or savorypuff pastry. It is part of theMoroccan cuisine.[1][2][3]Briouats are filled with meat (mostlychicken orlamb) orfish andshrimp, mixed withcheese,lemon andpepper. They are wrapped in warqa (a paper-thin dough) in a triangular or cylindrical shape. Briouats can also be sweet, filled with almond or peanut paste and fried, then dipped in warm honey flavored with orange blossom water.
The briouats arefried orbaked and then sprinkled withherbs,spices and sometimes withpowdered sugar.
