Binakol, also spelledbinakoe, is aFilipinochicken soup made from chicken cooked incoconut water with grated coconut,green papaya (orchayote),leafy vegetables, garlic, onion, ginger, lemongrass, andpatis (fish sauce). It can also be spiced with chilis.[1][2]Binakol can also be cooked with other kinds of meat or seafood. It was traditionally cooked inside bamboo tubes or directly on halved coconut shells. The dish originates from theWestern Visayas, particularly the provinces ofIloilo andAklan.[3][4]
The dish is very similar totinola andginataang manok, except the latter two use water andcoconut milk, respectively, instead of coconut water.[5][6]
