Binagoongan is aFilipino cooking process consisting of vegetables (most notablywater spinach) or meat (usuallypork, but can also bechicken orbeef)sautéed orbraised inbagoong alamang (shrimp paste), garlic,black peppercorns, andbay leaves. Some recipes also add pineapples, chilis, orcoconut cream to balance the flavors. The dish is characteristically quite salty with a strongumami flavor, which is why it is always paired withwhite rice and never eaten on its own. It is very similar topinatisan which is cooked withpatis (fish sauce), one of the by-products of fermentingbagoong.[1][2][3][4][5][6]
