Barros Jarpa is a popular sandwich inChilean cuisine that includesham and meltedcheese.[1] It is named after the 19th century Chilean MinisterErnesto Barros Jarpa, and was coined in the restaurant of theNational Congress of Chile, where Barros Jarpa always asked for this sandwich.[2] It is a derivative of theBarros Luco sandwich.
The minister's cousin, PresidentRamón Barros Luco, asked for sandwiches withbeef andcheese; these sandwiches were calledBarros Luco. Barros Jarpa found this combination hard to eat, so he replaced the beef with ham.[citation needed]
