Aguachile is aMexican dish made ofshrimp andraw fish fillet, submerged in liquid seasoned withchiltepin peppers, lime juice, salt, slices of cucumber and slices of red onion. This raw seafood dish comes from the north west region of Mexico (mainly Sinaloa), and is normally prepared in amolcajete. The origin of aguachile lies in the coast ofSinaloa, originally made with boiled water andchiltepines, small round chili peppers fromSinaloa.[1]
