Aggala (Sinhala: අග්ගලා) are a traditionalSri Lankan sweet.[1] They are essentially sweet roasted rice balls, made from rice, coconut, jaggery or treacle and pepper.[2][3]

Traditionally sun-dried boiled rice isground into a powder (alternativelyrice flour can be used) and mixed with fresh shredded or desiccatedcoconut, shavedjaggery (which can be substituted withkithul treacle or sugar), pepper and water until it forms a thick paste. The mixture is then rolled into small balls, and coated with rice powder or flour.[4] Other recipes include the addition ofcinnamon into the mixture and coating the balls with roastedsesame seeds. They are eaten as snacks.
