The enzyme3-phytase (EC 3.1.3.8)catalyzes the reaction[1][2]
myo-Inositol hexakisphosphate is also known asphytic acid.
These enzymes belongs to the family ofhydrolases, specifically those acting on phosphoricmonoester bonds. Thesystematic namemyo-inositol-hexakisphosphate 3-phosphohydrolase. Other names in common use include1-phytase,phytate 1-phosphatase,phytate 3-phosphatase, andphytate 6-phosphatase.[1]
Enzymes of this type participate ininositol phosphate metabolism.
As of late 2007, 12structures have been solved for this class of enzymes, withPDB accession codes1CVM,1IHP,1POO,1QFX,1QLG,1QWO,1SK8,1SK9,1SKA,1SKB,2GFI, and2POO.
