2-Nonenal is anunsaturatedaldehyde. The colorless liquid is an important aroma component of agedbeer[2] andbuckwheat, and is insoluble in water.[3]
The odor of this substance is perceived asorris,fat andcucumber.[4] Its odor has been associated with humanbody odor alterations during aging.[5]
