Ax-caboquinho is asandwich consisting oftucumã shavings,queijo coalho, andfried plantain between a sliced butteredpão francês. It is typical to the Brazilian state ofAmazonas and is officially recognized as anintangible cultural heritage [pt] of the state capital ofManaus.[1][2]
The sandwich originated inParintins and was popularized in Manaus byEscola Técnica Federal do Amazonas students from Parintins in the 1960s.[3]
